Best Homemade Sauce for Your Mexican Cooking – It's Easy and Versatile. - Duration: 5:16.

Hi welcome to Grandpa Can Cook. Look, we love cooking Mexican food and eating it

and over the years we found that the sauce that you use is one of the

ingredients that makes all the difference the difference between good

and absolutely great so we'd like to share one of our favorite sauces with

you now. The sauce I'm making is not only for Huevos Rancheros but you could use it

for so many different things and really add to your Mexican cooking and it's

gonna make many of your dishes just go over the top of greatness always starts

with some chili I'm using dehydrated ancho chiles I cut the seeds out I put

them in boiling water and I let them soak for 20 minutes

next we chop up some onions we dice them real small we take some peppers now I'm

using jarred roasted peppers but you can use red capsicums, green capsicums

whatever you want I just prefer the jarred roasted peppers chop them up small

but a little bit bigger than the onions maybe now it's been 20 minutes of the

chilies rehydrated we take up the chili and we chopped up into small pieces

an ancho chili is is a smoked poblano so it gives you it gives a real hearty flavor

and smoked taste to whatever sauce you make. Next we heat some olive oil in the pan

once that comes to temperature we put in there onions and we give them a stir

we're going to cook the onions just till they're translucent you can see the oil

shimmering that's about where you want it we're about you know medium to

medium-high heat so you're cooking them then we add two cloves of crushed

garlic we mix that around we keep it moving so

the garlic doesn't burn now as soon as we're done with that we're going to add

the peppers both the Chili Peppers and the capsicum or bell peppers whatever

you want to call them so we get those in the pot mix it up we give them a pretty

good stir we're bringing the heat to a medium and we start adding some of our

spices okay the spice list will be in the

description below we're adding a tablespoon, a teapsoon and a half, pardon me, of

American chili powder that's a different from milder form of chili powder than we

have available in Australia but you can see one of my videos on preparing it. Next

we're going to add some oregano now oregano is very common spice used in

Mexican food just about most of the dishes will have them and it really really adds

adds to them and we're gonna put in two to three tablespoons of tomato paste

we're gonna mix that around the pan we're gonna let it cook off for a while

to get that super tomato a taste out we're going to add a cup of water I'm

gonna mix that well this was putting in some Worcestershire sauce purpose that

it just gives a nice little tang to we put in between a quarter teaspoon and a

half a teaspoon we follow that with a can of tomatoes

I'm using chopped but sometimes I use whole tomatoes and I just mush them up

with the spoon while we're cooking it and I let that come to a boil and once

it comes to a boil you're gonna let it simmer for about 15 minutes at that

point you'll, (cough) excuse me, at that point you'll check for sugar and salt you'll

find out a lot of times when you use the tomatoes that the you need a little bit

of sugar to overcome the the tartness of the tomato now depending on what you are using the sauce for

you can leave it chunky like

we did or you can use a blender and make it thin maybe if you want to use it for

for an enchilada sauce. In this dish we're using it huevos rancheros we're just

going to cover up this put some sauce on the plate cover it up with tortillas put

some beans on that we're using black beans and put the sauce on the top. It really makes for a tasty dish.

Stephen Paddock, of Canada, was one of the unfortunate souls who got wrongly identified after a 4chan user spotted his recently-created Instagram account and posted his profile picture online.

When he woke up on Monday morning and checked his phone, the New Brunswick resident couldnt believe what he saw. I was taken back, Paddock said in an interview with The Daily Gleaner (paywall).

People I dont even know are sharing my picture. Speaking to the Canadian newspaper on Tuesday, Paddock described how he awoke to find hundreds of nasty comments on his brand new IG page — and his profile being circulated online.

Even after the [shooter] was dead, the [comments] kept coming through, he said.

By Tuesday, more than 1,000 people had commented on Paddocks account — which was created just hours before Stephen Paddock, of Nevada, went on his deadly rampage at the Mandalay Bay Resort and Casino.

Its soo funny how this innocent bystanders account is being used as an [sic] home page of the other Stephen, wrote one IG user. This isnt him guys. Chill, this guy is from Canada…leave the poor Canadian guy alone, another added.

While most of the feedback was negative, Paddock said he did receive a few messages that were positive.
