Sweet and sour, spicy and satisfying.
This flavor-Packed tomato Chutney makes the perfect accompaniment.
You will start by roasting some Chana Dal on a medium flame
Be careful not to burn them
When your dal begins to turn red, add some asafoetida to aid in digestion
Next add turmeric powder and dried red byadgi chilies for a perfect mix of bitter and spicy
For a hint of sweetness, we add some chopped onions to the mix
Saute these until they turn soft and are pink and translucent in color
It's now time to add the principal ingredient - tomatoes
These contribute to the sourness in the chutney
Add some salt and continue cooking until all the liquid evaporates
When your gravy is reduced set the mixture aside and let it cool down completely
When cooled, blend the mixture to form a thick paste
Don't add any water to this mixture while blending.
Now it's time to prepare the tempering
Heat some oil in a pan and add some asafoetida
Next add some mustard seeds
These will crackle and sputter. When your seeds settle adding some dry red chilies and curry leaves
Reduce the heat to prevent curry leaves from burning
Finally add your tempering to your chutney
and your tantalizing tomato chutney
