It means to act on an opportunity
quickly while there is time or favourable conditions exist.
This old proverb literally has its origins in blacksmithing because when forging items
out of metal, especially iron, it is necessary to strike the metal with a
mallet while it is still hot enough to be shaped. Hence, by striking while the
iron is hot you are acting while you still can.

We found a really nice apartment in the city centre we need to strike while the iron is hot
before someone else rents it.

Make sure you strike while the iron is hot when tickets go on sale because they'll be sold out in seconds.
