Today lets see how to make Carrot Halwa.
This is a healthy recipe which is loved by kids
To make this carrot halwa, I have taken 3 cups of grated carrot
(from 4-5 big carrots)
Before adding the carrots lets roast some nuts
2 tbsp of Ghee / clarified Butter
Once the ghee is melted add cashews
Once the cashews are golden add raisins
Once the raisins balloons up take it off from the pan.
Now in the same pan lets add our 3 cups of carrot
Cook it for 2- 3 minutes.
Once the carrot turns pale orange, lets add milk
I have taken 2.5 cups of milk for 3 cups of carrot.
If we reduce the amount of milk, we will get raw smell of carrot
so do not reduce the amount of milk to get rid of raw smell.
That's the reason we are adding more milk.
After adding the milk, Cook on medium heat.
Stir frequently, if any milk components settles at the end, pull it in and mix with the carrot.
Once the mixture thickens a bit, lets add sugar.
For 1 cup of grated coconut we need 1/4 cup of sugar
So for 3 cups of carrot we will need 3/4 cup of sugar.
You can adjust the sugar according to your taste preference.
Sugar melts and the mixture loosens as soon as we add sugar
Let it cook for some more time.
Once the mixture thickens , lets add cardamom powder
Roasted nuts (cashews and raisins)
and finally add 2 tbsp of ghee
Mix all the ingredients nicely and let it cook for 2-3 min.
Now you can see the mixture has thickened and our Carrot Halwa is set.
Lets turn off the heat.
That's it our delicious carrot Halwa is ready to be served.
We can follow the same steps for making Beetroot Halwa.
Since we have cooked it for a long time , there is no traces of raw smell of carrot .
