NOT chef buck here but we're gonna make a corn bean salsa that is simple it is
colorful it's flavorful and it's really versatile so let's get to it basically
the secret to this salsa is the dressing the sauce the dressing well we thought
us with just a little bit of experimenting we could have fewer
ingredients to be really healthy and still delicious so I'm gonna show you
what we like little delicious delicious we're gonna mix up two different acids
this is a little bit of living juice you'll see not a whole lot and red wine
vinegar and then the three seasonings that I would suggest you put in no
matter what else you like garlic powder freshly ground pepper and just a wee bit
of salt your hand elements are gonna have some salt as well something else we
like because you do have a lot of acid and we're not going to add any oil so
this is turmeric so not only is it doesn't have health benefits but it
really does a great job of sort of taming your acid and then we have a
little bit of paprika and that's all we're gonna start with so you just mix
that up a little bit you can see you're like well that's not a whole lot of
dressing for this much beans and corn you can definitely double this something
to consider when you're making your dressing and you say oh I want it to be
a lot sweeter we'll add a little bit of honey I'm gonna add just a smidge today
but remember your corn has sure it's going to add a sweet flavor to your dish
tomatoes also have a bit of sweet so you're thinking oh that's a bit of bite
well you want a little bit of pizzazz we're not gonna add jalapenos I know
chef buck I know sorry don't be brokenhearted but I am gonna
add just a little bit of honey that way I don't have to edit it sound effect
later whatever and make sure it's what you want I'm gonna add just a little bit
more it's always easier to add a little more sweetener than to take it out it's
really easy to over sweet that's the simple dressing we start with and I like
to make it first so we can sit for just a minute while we're cutting all of our
vegetables to and then you're putting it together so
we're gonna put it aside and chop because you know you don't feel really
like you're in the kitchen unless you're cutting stuff okay that was a little
scary some people really love a red onion effect in the description we'll
put some of the other things that have worked for us that other people have
liked but we're just gonna use some green onions and you're like god that's
a lot of onion but they're green onions but we got a lot of beans and we want to
add some flavor to everything so we're gonna get all our ingredients chopped up
our beans and corn are waiting patiently and so we've got some green onion
chopped up we've got some red pepper chopped up and you'll see they're
they're chopped up fairly small like the beans and corn then we're adding some
tomato some people prefer not to because they're a little more watery they can
make your salsa more watery yeah but the other thing we really love in our salsa
is cilantro we like to give it as a bouquet of flowers no but if you have
one of those crazy friends that it tastes like soaked to them I hate to
tell you there is now science behind it that says there are some people their
taste buds truly when they taste cilantro they taste so crazy yeah there
is now science next we're just gonna grab a big ol bowl and mix all the
ingredients together so we start with the star of the show our beans and corn
have been drained and rinsed onions red pepper we've got our tomato see how
powerful it is already and lots and lots of cilantro look at all that goodness it
looks so healthy so I like to just mix everything up before I add in dressing
itself cuz also you can take a look and if you say hey I'd like a little more of
X or Y you can all right you say that is a lot of salad and a little bit of
dressing that dressing has a big bite so we're just gonna add all that in there I
do not add avocado until just before I'm gonna serve it because we have
and juice in here it would help it from turning brown but you know why take the
chance got all these beautiful colors we've got
in the sizes that we know we like it's salsa size it's salsa sized the world is
perfect you let it sit overnight we're gonna let this sit let the flavors
marinade and then we'll come back and add the avocado and we're going to show
you a few different ways that we use it uh-huh
so it's been about 24 hours so now we're ready to add don't know avocado yeah we
didn't put any oil so this mo kado is gonna be kind of like to be the fatty
creamy part of this yeah if you think this is gonna sit around for two or
three days you can sprinkle it with a little more citrus we know from
experience this ain't gonna last that long so just get your avvocato all mixed
up there with those other flavors and that's it
we're ready to go to chip town so now you get to be the camera girl so I can
be the official taste tester yeah how did that happen well I gotta take
another bite just in case just to be sure more bite oh my god even when I'm
the actual whatever cook chef I don't get to eat something's wrong with this
picture no I love this awesome just with chips
fantastic oh it is it's awesome but you could also use this just as a salad
topping you know just throw it on top of a green salad
all righty in addition to just using it for chips you can also use it as a
topping for fish I just added some mango yep we're worth it and some cumin and
then I just heated it up and oh my gosh it's like a fancy restaurant up in here
so you've got a mango salsa now and somewhere under there is a piece of fish
yeah buddy you got some plain-jane fish you know that don't have a lot of flavor
you know you can jazz it up with a little bit of a salsa now I'm usually
not a big fan of fruit on fish on account of me having all my brain cells
you know some people like that you better watch it buddy
just cameras gonna come crashing in your head oh you know it's actually pretty
good duh that cumin then let's set it off I want to hate the fruit on the fish
but I can't hate it ...you can have it on a plain Jane piece of
fish or you can eat on a ship like a real man but if you want to print this
