I studied Oenology in Melbourne, Australia.

And from there, I travel.

Every part of opening a bottle to tasting the bottle

and seeing the evolution of the bottle is the entire journey.

It connects people; whether it's business,

whether it's friendship, whether it's lovers.

If it sits in the middle of the table, it's this beautiful cosmos

that connects everything that we're about.

I guess it looks like I'm a mad scientist, right?

This is where I find the best of the ingredients and put small bits of this,

I really like spicy wines because I think it's more complex.

You know for me it's about elegance.

What I love is pretty aromas, I don't like heavy, I like pretty.

The skyline's incredible, I mean this is one of the most impressive

skylines of the world.

I'm really not so picky when I travel.

You know I'm happy to eat on the street, happy to eat in a Michelin restaurant,

I'm happy to sleep in a five star hotel or on a friend's sofa.

The journey is the experience.

I think the motivation is always about the unknown.

Travelling so much gives me an opportunity, part of this virtuous cycle

where the more I travel the more miles I get.

I want to collect as much as I can, redeem as much as I can

and I can really share them.

Yeah it's hectic but it's energy.

It's organized chaos.
