We are gonna make a queso cheese dip.
Pfft.
It is one of my all-time favorite things.
For that queso, you need a honking queso cheese.
This cheese is like a fresh mozzarella.
It melts so beautifully.
Mm, I love it.
We're gonna add some Monterey jack,
and, we're gonna put in
a little bit of the ol' processed.
I love that, American cheese.
Those are the three cheeses I think are great in queso
'cause they're all relatively kind of neutral.
But they give you just a great,
you know, ah-ah, good queso.
Good queso.
Good queso.
To make queso we need a double boiler.
Let me describe this to you.
You get a pot with just a little bit of water.
Then we're gonna get a big glass bowl,
put that on top.
When we boil this, the steam is gonna heat the bottom of
that bowl and we're gonna be able to make a cheese sauce
that does not burn.
We're gonna take all of our cheese...
and put it into the bowl.
We're gonna add about half a cup of whole milk,
just enough to bring it all together.
For something like this, all you need is a spatula.
We just keep stirring it until it's fully
incorporated and we're good to go.
While this is heating up and melting,
we're gonna take perfect corn tortillas and
make fresh tortilla chips.
A fresh corn tortilla still doesn't do it for me.
It doesn't, I'm sorry.
But when I'm making nacho chips,
corn tortillas I think make better nacho chips.
We're just gonna cut these, around 12,
into quarters.
Now just take one stack at a time.
We're gonna have to do this over a few times...
Because we don't want to overcrowd our fryer.
We're just gonna take our tortilla chips and
throw 'em in there.
Put in a little bit at a time and move 'em around.
And by the time we're done making all of these
tortilla chips, our cheese will be melted.
The tortilla chips will take about 2 to 3 minutes to cook
in that oil at about 360 degrees Fahrenheit.
That's how you do that.
So now these got nice and golden brown.
So you want to make sure all the oil gets off 'em,
so just line your bowl at first.

So take your chips out and just throw 'em on a towel.
Try to get all the fat.
Just leave them there, and we're gonna take
our other little section.
We're gonna put 'em in there and just keep 'em frying.
Doesn't take long.
And you have fresh tortilla chips.
Maybe people should buy tortilla chips.
I showed you how to do it.
You don't-- no one...
maybe people will do that once.
It's kind of a ball ache.
But if you already have the deep fryer out for making
chicken wings and you throw in a bunch of fucking
fresh tortillas in there...
It's pretty easy.
Oh yeah, here we go.
Look at this cheese.
It's starting to melt.
Oh fuck.
I just think with the queso, adding the Monterey jack
and the processed cheese.
It just makes it that much kind of grimier.
Look at that.
That is the good queso.
That's when you know it's real good.
And you know what would make queso even better?
Pickled jalapenos.
Look at that.
I like a lot.
You can use store bought ones.
I like using store bought ones for this because...
It's just easier.
I don't always have pickled jalapenos on hand.
You could use fresh jalapenos, for sure.
I like adding pickled jalapenos because they're a
little bit vinegary and it kind of is nice to add a
little bit vinegar to that cheesy richness.
Now, here.
I'm just gonna bring this over.
This is done.
This is hot enough.
So this queso is perfect.
Now we're gonna take our pickled jalapenos.
Look at this.
I love this!
Incorporate your pickled jalapenos.

The pickled jalapenos, the Monterey jack,
the processed cheese.
Oh my dear lord, this is the queso
we've all been dreaming about.
Processed cheese melts really well.

Now get a bowl.
We're gonna add some queso.

That nacho cheese is fucking lit.
Now, fresh tortilla chips.
We put it on a towel.

Get rid of it.
Take a bit of a spice.
Tajin is just a nice little Mexican spice that you can buy.
It's just like a really nice-- it's kind of like
acidic, salty, spicy spice.
It's really good.
It kind of tastes like there's like lime zest in it.
Oh, yeah.
Just get a small bowl and
pour a bunch of chips on top of it.
Oh my god.
Look, you can't beat this.
Here you go.
You got your chip.
Look at that queso.
Oh!
Give it a little flip up.
That's incredible.
