Hi everybody I'm so happy that you're
here I have a new kitchen as you can see
in the background and I'm going to do my
tutorials here from now on and I wanted
to share with you a cake that I made
recently for a Mother's Day cake this
cake would be so perfect for your mom
it's got tons of buttercream flowers and
a ganache basket-weave so I'm going to
go ahead and show you how I made this
cake and I have a mini version of it I
made a little smaller version so we'll
be doing that together let's get started
so before we get started I just want to
show you what tips you're going to need
for which flower this is the dogwood
flower and that is made with a number
104 you could also probably use a
102-103 if you want to make smaller ones
I used for these tulips here I used a
Russian tip that's the tulip Russian tip
for the hydrangea flowers I used the
number 131 Wilton and for the rose again
I use the 104 and for the piping of the
basket weave I used a round tip you can
use whatever size you want for a however large of
weave but this is a
number 10
so I have a batch of chocolate ganache
which I will put a link for you in the
description box so you can find the
recipe so I'm starting with the
chocolate ganache and I'm just going to
cover my cake this doesn't have to be
super well like pretty just has to be
cover the cake it's okay if a little
bit of the white shows through so in
order to get my cake to stay in place
when I'm decorating I'm using some shelf
liner and also underneath your cake you
want to have a piece of cardboard in the
shape of the cake I'm going to continue
covering my cake
and then you're going to take your bag
and you're going to fill it with a
ganache I'm going to make the ganache it
will be soft and you'll have to put it
in the fridge for a while and you take
it out and stir it every once in a while
until it gets to be the right
consistency so that you can pipe it so
you want to start with a line going up
I'm going to start on the side
and then you're going to pipe over
horizontally
and just continue that down the cake
I'm going to continue and probably fast
forward this part I was the ganache
starts to get too hard
you can give warm it up with your hands
or you if you have to you can stick it
in the microwave for a second and then
mix it a little bit
I have this beautiful piece of wood its
teak and I got a flea market and I just
love using this as a base and I think
I'll make a really nice base for this cake
so I'm going to attach it a little bit
of ganache and when I put it fridge
that ganache will harden and hold it
so I went ahead and I finished the
basket weave
so here is the cake on
a wooden platter
and then I'm going to put that on top of
the turntable
so now I can put the border on and I
forgot to mention at the beginning the
border tips so what I'm going to use is
a star or shell and this is a number 32 I have
very limited amount of ganache here I
probably should have made a little more
so I'm going to do the best I can with
what I have and just make a simple
border
let's start with the dogwood so I've got
my bag as full white buttercream with a
104 tip and I like the way the dogwood
looks when it's kind of on the side
they're kind of a flat flower so with
the other cake I put from in the middle
and then I realized that probably better
off on the side of those so you start
with a puff of icing
and you have your thick side down
just do a little puff and that's going
to give you some height for each
petal. that's a base for the actual
petal and what you're going to do is
you're going to start and with your
thick end down and you're going to start
to squeeze and as you squeeze you're
going to turn clockwise and kind of let
it flow
when you get to the center you're going
to pull it down then you're going to put
another one of those right next to it
squeeze you're going to go clockwise and
then down
that's one petal the entire time that
you're doing it you're pretty much
staying at a 45 degree
angle
now let's do the next petal hopefully
you can see that okay I'm going to do a
little puff starting right there in the
center we're going to do four all
together
45-degree angle squeeze clockwise and
down
- right next to it we're going to do
another one
and as you can see it kind of makes a
heart shape and that's the knot that you
see in the dogwood pretty cool I'm going
to move the camera
From a different angle we're going to do
a puff
thick side down 45-degree angle
squeeze I'm going around clockwise and
down repeat for the other side of the
petal one more
okay 45-degree angle
you can use your turntable a little bit
I would say that's an okay one not great
but the more you do these the better you
get
Then you're going to put a center I'm going to use my ganache
and then make a little bit a little bit
of brown on the edges right here I'm
going to go ahead and put some roses on
there and I'm going to show you one of
the roses and also I'll link to my rose
tutorial so you can really get a
detailed tutorial on that okay so I'm
going to go ahead and do the rose and
like I said I will leave a link I'll put
a link to the detailed tutorial on the
roses but basically you want to make a
base and start building the Rose with a
ribbon basically they're just ribbon and
you turn you're turning counterclockwise
on your piping clockwise and sometimes
you're doing the opposite
so we're going to start with a very
center just very tight and then we're
going to do three around that one two
three Then five petals I'll go the opposite way
now I don't always go the opposite way
depends on my mood and now we're going to
do seven one three so you're just going
up and down like are you upside down you
seven To put the rows on you'll need a
scissor and a dab
of icing where I want my rose That will
help to give it a little bit of height
and you close the scissors just kind of
you can move it around a little bit So
far it's looking you know not like much
yet but I put some flowers from a
buttercream roses on there
and then I might come back later and
fill in with more roses but for now I'm
going to put that aside and I'm going to
show you how I stripe my bag for my
Tulips
I've got the tulip tip in there and I've
got some pink buttercream and I'm going
to just put that around the outside part
the inside but on the outside of the bag
does that make sense
covering the inside of the bag with the
pink and then I'm going to put white in
there
squeeze that down just squeeze a little
bit out so with the Russian tip you're
just going to squeeze and pull and then
you're going to release when you get to
be about
three quarters of an inch Squeeze and release
so you can see it has a really cool
center and with these I like to do I
usually do like three together
The Hydrangea looks best when you have a
striped bag as well I'm going to go
ahead and stripe with a
delphinium blue it looks kind of purple
and I'm going to do the same thing where
I put the purple the darker color on the
outside
and then the white goes in the center
and you want to squeeze some of that out so
you can see the white
okay
Very similar actually to the tulips
squeeze and release let it ruffle a
little bit but it kind of do it's thing
then release
okay so now we're going to do the final
touch which is the leaves and I have a
parchment bag that I put together for
the lead and there is a link in the
description box to the tutorial on how
to make these so here we go I'm going to
just fill in
wherever there's an empty spot and
around the flowers
