Today we will be cooking "Sambar"
This is a south Indian dish which is very famous all over India.
This dish can be served with Dosa, Idli ,vada & steamed rice
Let's check out the recipe

To make sambar we will take 1 cup of Split Red gram (Arhar/tuwar daal in HIndi) soaked in water for 2 hours
Add 2 1/2 cup of water to the pressure cooker.
Add 1 teaspoon of turmeric powder
Add salt as per your taste
I am adding 2 teaspoon of salt..
Mix it well..
Cover the lid of pressure cooker and wait for 3 whistles
After 3 whistles, I will open the lid and check it..
As you can see, Daal is cooked now..
Now we can either add all the vegetables which we want to add to Sambar and cover the lid and wait for 2 whistles.
Or you can fry the veggies like I do ..
Heat oil in a small pan on medium heat
Now we will fry all the veggies which we want to add it to the sambar..
First I will add, 1 medium chopped onion and tomato to the pan..
Adding some beans , 3 small chopped carrots, 1/2 chopped gourd, 1/2 egg plant
you can chop the veggies as per your need..
Add 1 teaspoon of turmeric powder..
Add 1 teaspoon of coriander powder
Add 1 teaspoon of "kashmiri" red chili powder.
Add 1/2 teaspoon of Indian curry powder
Add 3 teaspoon of sambar powder
You can add sambar masala as per your taste...Mix it well..
Mix it well all the veggies..
Add 1/3 cup of tamarind pulp. Mix it well..
Let it cook now..
you can add any veggies of your choice..
Cover the lid and let it cook for 3-4 minutes
Make sure all the veggies are partially cooked..
we will be cooking the same veggies with daal too..
Now we will transfer all the veggies to the pressure cooker where we already prepared the daal and wait for 1 whistle.
After 1 whistle, sambar will look something like this..
Color looks good and even all the veggies are perfectly cooked also..
Heat 2 big spoons of oil in a small skillet over medium heat
add the mustard seed, cumin seed, and asafoetida powder
Add 2 small pieces of chopped garlic..
Add some red chillies prices to it and mix it..
Add some bay leaf to it..
fry it for a minute and then add it to the pressure cooker..
Once the mustard seeds start to sputter and the mixture is fragrant, remove from heat and stir into sambar. Serve hot.
Its ready to serve now..
Color of sambar looks really good and overall it looks really yummy..
