Due to many requests I am going to show you the recipe for Afghan Egg plant Lamb Palau
I hope you try this recipe and enjoy it with your families and friends
To make this recipe, you will need the following ingredients:
Basmati Rice - 1 KG
Lamb Meat (1/2 KG), can be substituted for beef or chicken
Egg plants x3
Onions x3
Garlic x 3-4
Turmeric - 1 Tsp
Dried Red peppers - 1 Tbsp
Garlic Paste
Salt - As needed
Canola oil - as needed
Dried Mint
Food coloring
There are 2 steps to preparing this recipe.
First, I will make soup broth from the lamb meat
Then, I will cook the egg plants
I am going to make broth from the lamb meat
I have about 4 cups of water boiling in the pot and now I will add the diced onions with garlic
Add Salt - 1 Tsp
Add the lamb meat in the pot and let it boil
Now, the lamb meat is cooked and broth is ready.
I will take the lamb pieces out and cook with onions in another pan.
Add 2 Tbsp of canola oil in a pan
Add the remaining diced onions and let it brown
The onions are cooked now. Separate it and let it cool
Turn these onions into paste form in a grinder
Add the lamb pieces from the broth in the pan
I will add the onions paste over the cooked lamb
There is no need to add more salt
I will cook it for about 2 minutes and then they are ready for the palau
Add about 2 cups of the lamb meat broth on the lamb meat for flavor.
Cut the egg plants in to 4 pieces without cutting the bottom edge so they remain in one piece
this way the bottom part stays with the egg plants
Cut from the center of the eggplants but make sure they remain intact
To create the spices for the egg plants, I will use 1 Tsp of canola oil in a separate cup
Add 1 Tsp of garlic paste
1 Tsp of Turmeric
Salt - 1 Tsp or as needed
Mix all the ingredients together
I will mix the egg plants with this paste
This mix will add more flavor and spice to the egg plants
I have about 1 thumb of oil above the surface in a pan for frying the egg plants
I will be frying the egg plants in the canola oil
The egg plants are cooking now. I will use this time to boil some water for the palau
Before adding the Basmati rice, add 1/2 Tsp of food coloring in the boiling water
Add 1 Tbsp of Salt or as needed
Add the Basmati Rice
The eggplants are cooked now. Move them to aluminum foil and then seal them with the aluminum foil to keep warm
The rice is cooked now
I will mix the lamb meat I cooked earlier with the rice
Make sure you mix well
Add about 1 Tbsp of Palau Masala (Recipe in Description)
Make holes in the rice to even the heat level
Add the egg plants in the aluminum foil on top
Cover the top handle with a cloth and let it simmer
Leave it for 25 - 30 minutes until its ready for serving
